Preheat the oven to 180 degrees Celsius.
In a bowl, mix beef mince, breadcrumbs, eggs, salt, black pepper, and chopped onions until well combined.
Shape the meat mixture into a loaf and place it on a baking dish.
Wrap the meatloaf with bacon strips, tucking the edges underneath the loaf.
Brush the meatloaf with maple syrup and set aside.
In another bowl, toss baby carrots, baby potatoes, olive oil, rosemary, salt, and black pepper until coated.
Arrange the vegetables around the meatloaf in the baking dish.
Bake for 50 to 60 minutes, or until the bacon is crispy and the meatloaf reaches an internal temperature of 70 degrees Celsius.
