Prepare a large bowl of warm water for softening the rice paper wrappers.
Dip one rice paper wrapper into the warm water for a few seconds until it softens, then lay it flat on a clean surface.
Place a small amount of lettuce, bean sprouts, bell pepper slices, carrot strips, avocado slices, and shrimp in the center of the wrapper.
Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom.
Repeat the process with the remaining rice paper wrappers and filling ingredients.
Serve immediately with your choice of dipping sauce.
