A nutritious quinoa bowl packed with protein and vegetables, perfect for a healthy meal.

coarsely diced

Rinse 1 cup of quinoa under cold water.
In a medium pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
While the quinoa cooks, chop cucumber, 1 cup of cherry tomatoes, and spinach into bite-sized pieces.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced shallots and sauté for about 5-7 minutes until lightly caramelized.
Once the quinoa is cooked, fluff it with a fork and mix it into the skillet with the shallots.
Serve warm, topped with 0.5 cup of feta cheese, avocado, cucumber, tomato and spinach.

Slice cooked chicken into strips and add to the bowl.
